1. Easy plantain croquettes

Ingredients

  • 3 eggs
  • 1 ripe plantain (30 g)
  • Vegetable oil (to taste)
  • Salt (preferably little)
  • 1 packet of breadcrumbs (200 g)

Instructions

  • Peel the plantain and boil until soft.
  • Mash it with a fork until if forms a paste, then add one egg and salt.
  • Form the dough into small balls.
  • Pour the breadcrumbs onto a plate.
  • Beat the other two eggs with a pinch of salt.
  • Dip the balls in the beaten eggs and then roll them in the breadcrumbs.
  • Finally, fry them in hot oil and then place them on paper towels i order to absorb the excess oil.

2. Cheesy plantain croquettes

Ingredients

  • 1 egg
  • 1 ripe plantain (40 g)
  • Grated cheese (to taste)
  • 1 scallion (20 g)
  • 1 tablespoon of butter (20 g)
  • Salt, cumin, and vegetable oil (to taste)
  • 1 packet of breadcrumbs (200 g)

Instructions

  • Peel and slice the plantain. Boil until soft.
  • Mash it with a fork and make a paste with the egg, some breadcrumbs, and salt. Mix until you get a nice texture.
  • Mince the scallion and fry it in the butter. Season with salt and a pinch of cumin.
  • Remove from heat and add the grated cheese. Set aside.
  • Make small balls with the plantain mixture, flatten them, and add a bit of the scallion/cheese mixture. Close it up and roll them back into balls.
  • Fry in hot oil until golden.

3. Plantain croquettes with green olives

Ingredients

  • 2 eggs
  • A bit of milk
  • 2 ripe plantains (80 g)
  • 6 cups of chicken stock
  • 1/2 cup of grated cheese (50 g)
  • 2 cups of flour (200 g)
  • 1 packet of breadcrumbs (200 g)
  • 3 tablespoons of butter (30 g)
  • Chopped green olives (to taste)

Instructions

  • Peel the plantains and cut into large pieces.
  • Boil in the chicken stock until soft and golden.
  • Mash them with a fork, add the butter and salt, and stir until well-mixed.
  • Make little balls and fill them with the olives and cheese.
  • Pour the flour onto a plate, breadcrumbs onto another, and the eggs (beaten) onto a third plate along with a bit of milk and salt.
  • Dip each ball into the flour first, then the egg, and finally in the breadcrumbs.
  • Fry in hot oil.

4. Plantain croquettes with tomatoes and onion

Ingredients

  • 1 egg
  • 2 tomatoes (60 g)
  • 1 onion (30 g)
  • 1 clove of garlic
  • 2 ripe plantains (80 g)
  • Salt and vegetable oil (to taste)
  • 1 packet of breadcrumbs (200 g)

Instructions

  • Peel the plantains, cut them into pieces, and boil.
  • Once soft, mash them with a fork.
  • Mince the onion and garlic.
  • Seed the tomatoes and dice.
  • Add the oil to a pan and fry the onion, garlic, and tomato for a few minutes. Add the salt.
  • Mix in the mashed plantain.
  • Chill for 15 minutes in the refrigerator (longer, if possible) and then roll it into small balls.
  • Fry in hot oil.

Serving ideas

These delicious plantain croquettes go great with fish or meat. They’re also good by themselves, as an appetizer, with a nice cup of coffee in the afternoon, or as a snack with some kind of spicy salsa.
